Step 1: Marinating the Meat

  • Take the chicken or mutton pieces in a large mixing bowl.
  • Add yogurt, ginger-garlic Paste, red chili powder, turmeric powder, coriander powder, garam masala, slit green chilies, lemon juice, salt, chopped coriander, and mint leaves.
  • Mix everything well to coat the Meat with the marinade. Ensure all pieces are evenly covered.
  • Allow the Meat to marinade for one to two hours while the bowl is covered. For best results, refrigerate overnight. Marination helps tenderize the Meat and enhance its flavor.

 

Step 2: Preparing the Rice

  • Rinse the soaked basmati rice thoroughly to remove excess starch. This will ensure the rice grains remain separate and fluffy.
  • In a large pot, boil 7-8 cups of water.
  • Add the whole spices (bay leaves, cloves, cardamom, cinnamon, star anise, and caraway seeds) to the boiling water.
  • Add salt and a tablespoon of ghee for extra aroma.
  • The soaked rice should be carefully added to the boiling water.
  • Cook the rice until it is 70-80% (parboiled). The rice grains should be firm but not fully cooked.
  • Drain the water and spread the rice on a plate to cool. Avoid overcooking the rice; it will be finished cooking later with the Meat.
